Soy Sauce Chicken


3 lb. fryer
2 cup dark soy sauce
1 cup water
8 tablespoons brown sugar
1 star anise (or 5-6 anise seeds)
1 chunk fresh ginger root, size of a quarter, crushed
1 stalk green onion, cut into 1 inch lengths


Bring all ingredients except chicken to boil in pot the size of chicken. Lower chicken into pot and bring back to boil. Cover and simmer 15-20 minutes. Turn chicken and simmer another 15-20 minutes. Lift chicken out and cool on platter 1/2 hour. Chop chicken, garnish with green onion and sesame oil and serve.
