Crispy Parmesan Fish

Ingredients

1 pound white fillets (I use whatever is cheapest – Dole is always a good bet)
2 ½ T mayonnaise
1 t Dijon mustard
1 t Worcestershire sauce
1 T minced onion (the dry kind)
1 ounce grated Parmesan cheese (I buy the tub at Trader Joe’s)

Directions

Preheat oven to 350 degrees, line a shallow baking dish with tin foil (makes clean up easy), and place fish fillet in dish.

In a small bowl, combine the mayonnaise, mustard, Worcestershire sauce, and minced onion and spread evenly over the fillets.

Sprinkle the fillets with the Parmesan, and bake uncovered for 30 minutes, or until crispy. (very thin fillets only take 20-25 minutes)

Scott loves this one – and he usually does not like white fish! I keep the fish smell out by turning the stove fan on high and lighting a good smelling candle. Then even his nose can’t tell. This is so fast and easy that we eat it once a week.
