Orange Sauce Yams


2 lbs cooked yams (takes about 20-25 minutes to boil – check with a toothpick)
Drain and cool.
Peel and cut into about 3⁄4 inch slices and lay in pyrex.

2/3 cup sugar
1/2 teaspoon salt
1 teaspoon grated orange rind
1 tablespoon cornstarch
1 cup orange juice
2 tablespoons butter


Stir first 4 ingredients in a saucepan. Gradually add orange juice. Cook, stirring constantly until it boils and thickens. Remove from heat and stir in butter. Pour sauce over yams and bake at 375 for 30-40 minutes.
