Roasted Asparagus


40 asparagus spears, trimmed (about 2 lbs.)
Cooking spray
1/4 tsp kosher salt
1/8 tsp black pepper
2 tbsp butter
2 tsp soy sauce
1 tsp balsamic vinegar


1. preheat oven to 400
2. arrange asparagus in single layer on baking sheet, coat with cooking spray. Sprinkle with salt and pepper. Bake at 400 for 12 minutes or until tender
3. Melt butter in small skillet over medium heat, cook for 3 minutes or
until lightly browned, shking pan occasionally. Remove from heat, stir in
soy sauce and vinegar. Drizzle over asparagus, tossing well to coat. Serve
immediately. Yield 8 servings (serving size 5 spears).
