Lemon Curd


6 eggs
2 c sugar
1/2 cup butter cut into 6 -8 pieces
3/4 cup freshly squeezed lemon juice

optional to grate some lemon rind and add it too.


In top of double broiler, whisk eggs, sugar, and juice until well blended and slightly thickened.
Add butter stir until thickened approx. 25 minutes. Stir frequently. Immediately transfer to bowl or containers.
