Sweet Potato Tortilla Soup



1 Large onion
2 TBSP of olive oil
2 tsp salt
3 Garlic Cloves
1/4 tsp chilli powder (or 1/2 red chili sliced)
2 TBSP roughly chopped cilantro stalks and leaves
2 tsp cumin ( I left this out as Larry doesn't like it)
1 tsp ground coriander seeds
1 tsp paprika
1 lb/ 500 g sweet potato - diced into cubes
1 can of black beans rinsed. (I made my own in the IP ahead of time and used 2 cups
2 c chopped tomatos
3 c home made chicken stock
juice of 1 lime
2 small or 1 large chicken breast

Serve with
diced avocado, cilantro, sour cream, cheese, chips


Press Sauté key on IP
heat olive oil add onions 1 tsp salt sauté for 5 min , add garlic, chili, cilantro spices and remaining salt, stir through. add remaining ingred except for lime juice stir well. press cancel to stop sauté.
Press Poultry - when finished NPR for 5 min . Shred chick with a fork add more fresh cilantro and the lime juice.

Serve in bowls with a spoonful of sour cream and a handful of broken chips.
Have cheese and avocado for additions per preference.

The chicken is my addition. IF you don't want chicken you can pick High pressure for 3 min the 5 min NPR.
