Minestrone Soup with Meatballs


1 c chopped carrots
1 c chopped celery
1 c chopped zucchini
28 oz can of chopped tomatoes
6 – 8 c chicken broth (I like the Better Than Bouillon brand which can be found at
WinCo and probably most other grocery stores)
1 can kidney beans
1 can garbanzo beans or cannellini bean
6 - 8 oz pasta
1 – 2 tsp dried oregano and/or basil
Trader Joe beef meatballs


Boil chopped carrots celery and zucchini in 1 cup water (or just enough water to cook
them) until they are soft. Add tomatoes through pasta and cook over medium heat until
pasta is soft. Season to taste (I usually add oregano and sometimes basil and maybe some pepper and salt if needed). At the end I add Trader Joe’s beef meatballs chopped up in bite size pieces. I cook them in the microwave according to the directions on the package and then add them to the soup.
