Cooking Wright

Chicken Chili


1 Zucchini
1 Med onion
1 Bell pepper
2 Cans Pinto beans
2 Cans black beans
2 Cans Kidney beans
2 Cans Corn
16 oz Thick and chunky salsa
3 Chickens breasts (or shred rotissarie chicken)
1 Tbsp Chili powder
14 oz Chicken broth
1 Big can Diced tomatoes
8 oz Tomatoe sauce
1 Garlic clove oressed
1 tsp Cumin
2 Tbsp fresh lime juice
1 Bag Corn chips
1 Sour cream
1 Shredded cheese
1 Can Olives


Sauté onion, zucchini, pepper, chili powder & garlic until onions tender
Add other seasonings & lime juice
Add chicken breasts cut in quarters and other ingrdients
Bring to boil and then simmer 30 min or until chicken tender & starts to fall apart
Shred chicken
Simmer until ready to serve
Top with corn chips, sour cream, cheese, olives
