Cooking Wright

Couscous Salad


Boil 1 1⁄4 cups water
Stir in 1 cup dry couscous
Let stand 5 minutes
Fluff with fork then chill
1 1⁄2 cups nectarines, cubed
1 cup chopped spinach
1⁄4 cup chopped green onions
1 can garbanzo beans, drained
1⁄2 cup craisins


Mix all ingredients together with couscous


2 tablespoons lime or lemon juice
1 tablespoon olive oil
1 tablespoon honey
1⁄2 teaspoon salt
1⁄2 teaspoon cumin
1⁄2 teaspoon ground coriander

Toss well with salad
