Oriental Chicken Salad


1 pkg. (3 3/4 oz.) cellophane noodles (bean threads) (optional)
1/2 head lettuce, shredded (about 4 cups)
3 cups cut up cooked chicken
1 medium carrot, shredded (about 1/2 cup)
1/4 cup sliced green onions
1 tablespoon toasted sesame seeds (optional)


I either microwave or boil the chicken. I've also used precooked seasoned and unseasoned chicken (from Costco) and they all taste good.
You can also use chopped cabbage either in place of or as a substitute for some of the lettuce.
I'e never tried this with the sesame seeds because I don't like them.
I haven't tried this yet, but I this recipe would also be yummy as a wrap filling if you use the cabbage instead of the lettuce, and maybe add some bean sprouts.
Trader Joe's has shredded carrots that actually taste good.
