Cooking Wright

Thai Chicken Salad


1/4 c oil
2T chunky peanut butter
1 1/2 t sugar
4 t soy sauce
4 t cider vinegar
2 T Sweet Chili

2 c cooked cubed chicken breast
2 c uncooked curly rotini pasta
4 green onions
Salad greens (I usually use iceberg the texture is good for this salad)


Combine salad dressing ingredients and set aside.
Cook pasta, mix pasta chicken and dressing
Mix Salad with onions
Serve a a mound of lettuce with a scoop of pasta mixture on top. Serve with extra sweet chili sauce as desired.
