Cooking Wright

Kristi's Salad


2 heads of mixed lettuce
1 bag of frozen white corn from Trader Joes (I'm sure any will do!)
1 cup of chopped cilantro
2 cups of chopped apples
1 cup of peanuts (or nuts of your choice)
1 cup of crumbled blue cheese (or try salata ricotta)
4 cups grilled chicken breast chopped
1 bag of red or blue tortilla chips (just add to taste - don't need whole bag)
1 chopped red onion
50/50 BBQ sauce/ranch dressing


Mix it all together and serve!
