Pumpkin Chocolate Chip Cookies


1 cup butter
1 cup brown sugar
1 cup white sugar
2 eggs
2 tsp vanilla
15 oz can pumpkin (or 1 1/2 cups)

5 cups flour
1 1/2 tsp baking soda
1 1/2 tsp baking powder
1 tsp salt
2 tsp cinnamon
pinch of nutmeg
1 bag or 2 cups chocolate chips


Preheat oven to 375
In a large bowl cream butter and sugars for a few minutes, then add eggs and vanilla and pumpkin. Blend.

Mix dry ingredients in a separate bowl.

Add dry ingredients to wet. Mix just until blended. Add chocolate chips.

Drop onto cookie sheet and bake 9-11 minutes

Total of 1,063.6 carbs.
Makes 60 cookies, each cookie has 17.72 carbs
