Cheesecake (Headley's Mad Scream of Delight for Charlie)

Ingredients

Vanilla wafer crust:
Grind half of a 12 oz. box of vanilla wafers in blender. Combine with 2 tablespoons of sugar and 4 tablespoons of melted butter. Press crust evenly into 9” pie plate.

Filling:
10 oz. cream cheese, room temperature
3/4 cup sugar
2 teaspoons vanilla
2 eggs
2 teaspoons very finely grated lemon rind
1 cup sour cream

Directions

Combine in blender until smooth. Carefully pour into crust and bake at 300 for 40 minutes or until it no longer jiggles in the middle. Cool 10 minutes.

Topping:
1 cup sour cream
3 tablespoons sugar
1 teaspoon vanilla

Combine and pour over filling. Bake 5 minutes at 400.
