Grandma Keig’s Fresh Apple Cake


2 cups finely cubed apples
1 cup sugar
1 cup flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
1/4 cup oil
1 beaten egg
1 teaspoon vanilla
1/2 cup chopped nuts
grated orange or lemon rind, if desired


Mix together. Bake in 8x8 inch pan at 350 for 40 minutes.

Brown sugar dip:
1 cup brown sugar
2 cups water
1/2 teaspoon nutmeg
1 tablespoon butter

Boil, thicken slightly with cornstarch. Serve over warm cake.
