Spice Cookies


2 cups flour
2 teaspoons baking soda
1 teaspoon cloves
1/2 teaspoon ginger
2 teaspoons cinnamon
1 cup sugar
1 egg
3/4 cup butter
1/4 cup light molasses


Mix sugar, butter and egg. Add molasses. Add spices, soda and flour. Mix well. Form dough into small round balls. Roll balls in sugar. Bake 10 minutes at 350 on greased cookie sheet.

Cookies are best if they look under-cooked when removed from oven.

Nutritional note: entire recipe plus using up 3 Tbsp. sugar to roll the cookies in is 511g carbohydrate. I got 30 cookies weighing .9 oz each, which is 17g carb per cookie.
