Vallard's Fluffy Pancakes

2 eggs
2 cups of milk
2 Tablespoons Vinegar
2 tsp baking powder
2 tsp baking soda
1 tsp vanilla
1/4 cube of butter (melted)
2 cups flour

1. Put two cups of milk with 2 Tablespoons of Vinegar in a large mixing bowl and stir up.

2. separate eggs: Put yolks in with milk and vinegar and beat egg whites in a small cup until you can make nice white puffy peaks.

3. Add baking powder, baking soda, vanilla, and melted butter to milk mixture and stir really good. I like this part because I get to see the chemical reaction with the stuff mixing together.

4. Add flour into mixture and do not over stir. Get it mixed in the best you can.

5. Put on griddle at around 350 degrees and cook. Makes about 24 small pancakes. Usually enough to feed all of us... for now
