Fruity Yogurt Pancakes


2 cups Trader Joes baking mix
1⁄2 cup milk
1 teaspoon sugar
1 container (6 oz.) fruit-flavored yogurt
2 eggs


Heat griddle or skillet; grease if necessary. Beat all ingredients with wire whisk or hand beater until well blended (batter will be thick).

Pour batter by scant 1⁄4 cupfuls onto griddle. Spread batter slightly.
Cook until edges are dry. Turn; cook until golden.

About 12 pancakes

I turned the pan down quite a bit lower than I do for normal pancakes so they would cook through without burning.
