Indian Zucchini


2 small zucchini (you can add cauliflower too)
1 large tomato
1 medium onion, diced
3-4 garlic cloves
ginger (fresh or powder)
salt and pepper to taste
1/4 teaspoon meat masala
2TB any kind of oil
1/4 tsp turmeric
1/8 tsp paprika
1/2 tsp cumin seeds


1. Drizzle oil in pan
2. Add cumin seeds
3. Add onions and cook until lightly browned
4. add garlic and ginger
5. sauté slightly
6. add turmeric and meat masala stir
7. add diced zucchini and cauliflower
8. add diced tomato
9. add salt and pepper
cook covered until soft.
Uncover and cook on high heat till water is absorbed.
