Banana Bread


1/2 cup butter
1 cup sugar
2 eggs well beaten
4 medium bananas
2 cups flour
1/2 - 1 teaspoon salt
1 teaspoon baking soda
1 teaspoon vanilla


Cream butter and sugar. Fold in eggs. Mix in bananas. Sift dry ingredients together and add, beating in quickly. Add vanilla. Pour into greased 9x5x2 1/2 inch loaf pan and make well in center. Let stand 20 minutes. Bake at 300 for 1 hour and 20 minutes.

I have made this by just creaming the butter and sugar, and then just adding the other things without the extra steps like beating the eggs first, and mashing the bananas (but the bananas need to be really ripe) and it turned out fine.
