Lemon Bread


1 1/2 cups flour
1 (3.4 oz) package instant lemon pudding mix
1/2 tsp baking powder
1/2 tsp salt
3 eggs
1 cup sugar
2 Tbsp. butter softened
1 tsp vanilla
1/3 cup lemon juice
1/2 cup oil
3/4 cup plain Greek yogurt

3 Tbsp butter soft - not melted
1 1/2 cup powdered sugar
3 Tbsp. lemon juice


Preheat oven 350 degrees. line bottom of loaf pan with a piece of waxed paper or spray with non-stick spray.

Combine: flour, pudding mix, baking powder, baking soda, and salt

With a mixer combine eggs, sugar, butter, vanilla, lemon juice, oil, and yogurt.

Add dry ingredients.

Bake 45-55 min

Let cool and frost.
