Kristi's Scones


2 C. flour
1/3 c butter (chilled)
1/2 c. heavy cream or 1/2 and 1/2
1/4 c sugar
1 large egg
2 tsp. baking powder
1 1/2 tsp. vanilla


Preheat oven to 425. Lightly butter a cookie sheet. In a large
bowl, stir first 4 ingredients. Cut butter into the mixture with a
pastry blender. In a small bowl combine cream egg and vanilla. Mix
until combined. At this point you can do many different options.
See below. Then form into 7-8 pie shaped scones. Sprinkle with raw
sugar. Bake for approx 11-12 minutes edges should be lightly
browned. Serve warm from the oven.
*Cut above in half cover with fresh strawberries and
whipped cream makes a Great strawberry shortcake
*Add to dough mixture 1/2 c. dried cranberries and ¼ c.
white choc chips.
*Add lemon peel to dry ingredients then mix. Serve with
lemon curd.
*Add orange zest to dough then frost tops with frosting
made with fresh squeezed orange juice and powdered sugar.
* Add to dry ingredients dried cranberries and orange peel
*Add almond extract in place of vanilla and add choc chips
to dough
*The most important part is to experiment find what you like and go
for it.
