Watermelon, Feta and Mint salad

Ingredients

3/4 c fresh mint leaves
1T sugar
1 Serrano chile, seeded and chopped (optional)
2 T rice vinegar
1 T fresh lime juice
3 T EVOO
Salt & freshly ground pepper
1 small seedless watermelon (abt 3 lb) peeled & cut into wedges or cubes
6 oz feta cheese, crumbled into pieces

Directions

Process 1/2 c mint leaves & sugar in food processor till well blended. Add chile, vinegar, lime juice, process again. With motor running drizzle in EVOO. transfer the vinaigrette to a bowl and season with salt and pepper.

Arrange watermelon and cheese on plates, drizzle with vinaigrette, garnish with remaining mint and serve!
